Because this is such a simple, easy recipe, there are a few variations, substitutes, and additions you can make to customize this recipe to better fit into your diet and lifestyle.

 

Keto-Friendly

Instead of traditional sugar, we recommend using keto-friendly sweeteners like erythritol or xylitol—but if you’re using xylitol, be sure to be careful if you have a dog or cat around the house as it’s highly toxic to them.

 

Protein Packed

Amp up the protein by adding a scoop or two of your favorite protein powder to the gooey marshmallow mixture. Add at the same time as cinnamon for an ideal consistency.

 

Lower Calorie Count

With 50 calories per cup, KUDO Protein Popcorn on its own is a great satisfying low-calorie snack, but when making healthy cinnamon popcorn balls, the added calories come from the fat used to keep the popcorn balls soft, chewy, and not too sticky. If you’re interested in ditching the butter or coconut oil, just be aware that they might be super sticky and gooey!

 

 

Ingredients


4 oz. (2 bags) Salty Sweet Kettle Korn Protein Popcorn
3 oz. keto-friendly marshmallows
2 tbsp butter/coconut oil
½ tsp cinnamon


Keto cinnamon sugar mixture for dusting: equal parts cinnamon and erythritol sugar. We used ¼ tsp for each.

 

Instructions


Measure your popcorn into a bowl. Set aside.
In a medium size saucepan, melt butter or oil. Add marshmallows and stir on low heat. Mix well until melted.
Remove from heat. Stir in cinnamon and protein powder (if desired).
Add marshmallow mixture to popcorn and stir. Once fully combined, form six balls and set on parchment paper to cool.
Sprinkle cinnamon sugar mixture over balls for added sweetness.
